Wait a minute...what is Frizzante?

Fair question. Most people assume Prosecco is just Prosecco, but it isn't.

Quick bit of housekeeping first: we used to call the grape Prosecco. Now we call it by its traditional name, Glera, and "Prosecco" refers to the area in northern Italy where Glera is grown. So Prosecco is a place, not a grape.

Within that place, there are styles. The one you know...the bottle with the mushroom cork and the wire cage, the one that goes pop. That is called spumante. A fully sparkling wine. 

Frizzante is the other style. I call it "gently sparkling" or "bubbles light". It has less than half the pressure in the bottle than spumante. it is bubbles without the fireworks.

Only about 23% of all Prosecco is made in the frizzante style. The other three-quarters is spumante - the stuff built for toasts and weddings and New Year's Eve.

Frizzante is what Italians actually drink. It shows up in a carafe on the table at the start of a meal. It's not for celebrating anything in particular. It's for Tuesday. It's for the patio. It's for the pool. It's for that stretch of the afternoon when a full-throttle sparkling wine feels like too much and a still white feels like not enough.
