Pinot Noir, which is famous for being the world's most fragile, temperamental grape, doesn't need years of oak and cellar time to shine at this level. It needs to be clean, bright, and drunk young while the fruit is still singing. This one is exactly that.

La Sente des Moulins means "the path of the mills," a nod to the old footpaths that wind between the windmills of the Languedoc hills.

Why does southern France, which most people think of as hot and Mediterranean, grow good Pinot Noir at all?

Wind. The region gets hit by four named winds (the Mistral, the Tramontane, the Autan, and the Marin) that rip through the vineyards and keep mildew and rot, Pinot's two mortal enemies, from ever getting a foothold. Combine that with cooler, higher pockets of the region and limestone soils, and you get Pinot with real red fruit, soft tannin, and a silky texture, without anyone having to spray or manipulate it into shape.

Then the economics do the rest. Languedoc land costs a fraction of Burgundy. The sun is free. The region is sitting on more good juice than it can sell, and the French government has literally been paying growers to pull vines. Great Pinot is looking for a home, and we keep finding it.

This is fall Pinot. Roast chicken. Mushroom anything. The first soup of the season (does anyone just have an epic Soup recipe they can share with us and we can send out to everyone??!?!?). Or a Wednesday with nothing on the stove at all. Serve it with a slight chill and it's dangerous. 😂

I'm in for a case. My wife has already claimed half of it.
